People often think about Bun Mam (Noodle with nuoc mam) of people in Quang Nam, but Bun Mam Da Nang is moreish for the clever combining of the smell of Nuoc Mam (fish sauce), roasted peanut, young boiled jackfruit, and roasted pork.
Bun Mam is familiar with the people in Quang Nam for a long time for being a simple but subtle food. People could find it anywhere in Danang.
The ingredients of Bun Mam are noodle, fish sauce, herb, roasted peanut, young jackfruit, roasted or boiled pork, fermented pork roll and pork pies according to the favor and the spices.
Fish sauce is made from the anchovy cleaned by sea water, aromatizing with salt in the traditional way. When it is done, there is a typical smell encouraging the sense of smell of people. It is not hard to buy fish sauce, it is sold everywhere in the city. However, in order to be tastier, people often add on some sugar, lemon water, garlic, chilli and pineapple water, etc.
The herbs are salad, bean sprouts, mint leaves, etc, there could be a little young thin papaya.
The arrangement of a bowl of Bun Mam is that herb in the bottom; noodle is placed above, roasted pork (boiled pork or pork pies), dust with some roasted peanut and some young boiled jackfruit, and lastly is the nuoc mam.
Before eating, people mix everything with a pair of chopstick to keep it drawing in the noodle, herbs, and pork. Each move of mixing could release the smell to attract your taste.
When you eat the noodle, you could feel the hot of the chilli, fat of the pork, and buttery taste of the roasted peanut along with the typical taste of the nuoc mam.
With the people eating them in the first time, people would find it’s hard to like but after that, they may be “addicted”. People said if you have not taste Bun Mam, Mì Quảng (Quang Nam Mee), Cao Lầu (a kind of noodle in Hoi An), you could be considered to not being in Quang Nam.
